Ingredients
Reserve 1/4 cup diced watermelon. Blend remaining ingredients until mostly smooth with small chunks or per your preference. Serve garnished with diced watermelon.
- 2 cups watermelon, cut into 1/2 inch cubes
- 1 large tomato
- 1 serrano chili (or sub red chili powder to taste)
- 2 tbs vinegar (cider + balsamic)
- 1/4 cup olive oil
- 2 tbs chopped cilantro
- 1/2 green bell pepper
- 1/4 red onion, diced
- salt to taste
