Watermelon Gazpacho

Ingredients
  • 2 cups watermelon, cut into 1/2 inch cubes
  • 1 large tomato
  • 1 serrano chili (or sub red chili powder to taste)
  • 2 tbs vinegar (cider + balsamic)
  • 1/4 cup olive oil
  • 2 tbs chopped cilantro
  • 1/2 green bell pepper 
  • 1/4 red onion, diced
  • salt to taste 

Reserve 1/4 cup diced watermelon. Blend remaining ingredients until mostly smooth with small chunks or per your preference. Serve garnished with diced watermelon.
