1 box instant sugar-free/fat-free pudding (vanilla or butterscotch are particularly good)
1.5 cups almond milk
1 cup canned pumpkin
pumpkin pie spices of your choosing: nutmeg, allspice, cloves, cinnamon, ginger, etc...
Whisk milk and pudding mix. Allow to set. Mix in pumpkin and spices, chill. Four servings.

Cinnamon Raisin Bread, Bread Machine Recipe
1 cup water
2 tablespoons room temperature butter (I happened to use salted)
3 tablespoons sugar
1 1/2 teaspoons salt
2 teaspoon cinnamon
(dash nutmeg and ground ginger)
3 cups flour (I used 1 1/2 C Pillsbury all purpose and 1 1/2 C King Arthur unbleached bread flour)
2 1/2 teaspoons active dry yeast
3/4 cup raisins, soaked in hot water and drained before using
The recipe makes a 1.5 lb loaf. I accidentally pressed the 2 lb loaf setting on my Cuisinart bread maker, though, and the result was perfect. Nice rise. Light texture, but not too aerated. Soft. Slightly chewy crust. Excellent recipe.
In a Cuisinart, add ingredients in the order listed, but reserve the raisins to add separately when the add-in beeps sound.

Xi'an Famous Foods Copycat Cumin Lamb
Ingredients

12 oz. lamb shoulder, cut into 1/4 inch cubes, trimmed of most excess fat and gristle
Neutral oil, for marinade and cooking
4 tablespoons cumin seeds, toasted till fragrant, divided
3 garlic cloves, roughly chopped
2 tablespoons soy sauce
1 tablespoon Chinese rice wine, or dry sherry
1 small onion, cut into short, thin slices
3 scallions, thinly sliced
2 jalapeños (or other green chiles), stemmed, seeded, and chopped
Fresh cilantro, roughly chopped, for garnish if desired
Procedures

Combine lamb, 1 tablespoon of oil, 3 tablespoons of the cumin seeds, garlic, soy sauce, and rice wine in a bowl. Let the lamb marinate while you prep your other ingredients, or up to half an hour.

Heat a wok or a large, heavy skillet on high and pour in enough oil to thinly cover the bottom. When very hot, add the lamb in one layer. Let it sear well on one side, then brown on all sides. After the initial sear, keep the lamb moving. Burnt cumin is nasty stuff.

Add the onions and a pinch of salt while scraping up any browned bits. When the onions have developed some color, add enough water to go halfway up the lamb. Bring it to a boil, then reduce it to a moderate simmer. Simmer till the lamb is tender, adding more water as needed when things are looking too dry.

When the lamb is mostly tender and the pan is mostly dry, add the scallions, jalapeños, and the rest of the cumin. Stir often until the jalapeños are softened but still bright green. Add salt, sugar, or soy sauce if needed, and cilantro if using. Serve over rice or noodles, or in a crusty bun.

Italian Honey Mustard Chicken
30 Minutes to Prepare and Cook
Ingredients
2 boneless skinless chicken breasts (split)
4 Tbsp honey mustard dressing
1 cup Italian Bread Crumbs
Directions
Split chicken breasts down the center. Rub honey mustard all over chicken, than roll in bread crumbs. Bake at 350 for 25 minutes.

2 cups Kellog's Corn Flakes Cereal, crushed
1 tsp salt

garlic powder

Preheat oven to 350 F.
Mix crushed corn flakes with spices.
Cut breasts in half, dip in egg wash and roll in corn flake mix.
Place in a shallow baking pan or flat cookie sheet, and bake until internal temperature reaches at least 165 F, or about 40 minutes.
Serves 4.

Season the chicken tenders with salt and black pepper. In a shallow dish, season the flour with salt and black pepper then beat the eggs in another shallow dish with the milk. In a third shallow dish, place the breadcrumbs.
Dredge the chicken tenders in the flour to coat, shaking off any excess flour. Dip the floured chicken tenders into the egg and finally, coat the chicken tenders with the breadcrumbs.
Place the breaded chicken tenders onto a baking sheet and bake in the oven for 12-15 minutes, until golden brown. [My notes: Mine needed to bake for 20 minutes.]
[My variations:
- Use a mixture of crushed corn flakes, rice krispies cereal, mashed potato flakes, herbs and spices -- cumin, garlic, onion powder, etc... in place of bread crumbs.
- Marinate tenders in honey mustard dressing with a dash of ground ginger, onion and garlic powder, salt, cayenne and black pepper for several hours prior to baking. Use this dressing to help crumbs adhere, not egg wash.]

Roast Chicken (Basic)
4.5 to 5 lb chicken
herbs: thyme, rosemary sprigs
salt, pepper
garlic cloves, chopped (6-7)
wash and dry chicken with warm water. allow chicken to warm to near room temperature.
preheat oven to 450.
separate skin from chicken by wiggling fingers / hand under skin, without breaking it. rub salt and pepper under skin, inside cavity of chicken and on top of skin. evenly distribute chopped garlic under skin adn inside cavity. insert sprigs of thyme and rosemary under skin, all over, and place remainder in cavity.
place chicken on roasting rack or rotisserie spits over 1 inch diced vegetables (potatoes, carrots, broccoli, etc...)
Bake at 450 for 20 minutes. reduce oven temp to 400. roast for an additional 40 minutes.

place chicken on roasting rack or rotisserie spits over 1 inch diced vegetables (potatoes, carrots, broccoli, etc...)
Bake at 450 for 20 minutes. reduce oven temp to 400. roast for an additional 40 minutes.
